Growing Tips

Summer Savory is grown as an annual plant that must be re-planted every year. It does great when planted with beans and tomatoes.

Hint: When planted near onions, Savory is thought to make onions develop a sweeter flavor.

Summer Savory tends to grow quick and may become heavy enough to require staking. You should support your Summer Savory plant to encourage growth and prevent the stalks from bending. Consistent harvesting of young growth will encourage constant production.

Culinary Uses

Summer Savory can be used with all types of dishes and has a similar taste to thyme and sage in flavor. Because of its similarities, Savory can be used as a replacement for these herbs in certain recipes. Savory has a strong flavor and should be used in moderation. Like thyme remember to remove the sprigs in your dish.

Tip: Plants should be at least 6” before harvesting for cooking purposes.

Medicinal Uses

Savory can be used for coughs, intestinal disorders, sore throat. Has been used for high blood pressure.

Savory can used to treat insect bites and can be made into a liniment for external use to ease pains of inflammation of joints. Savory made into a tea can be used as an antiseptic gargle.

Harvesting Crops

Harvest Savory in the morning after the dew on the leaves has fully dried. Fresh leaves reach best flavor before the plant starts to flower. Cut leaves and shoots from mature stalks. Leave most of the stalk so the plant will continue to grow.

Keep in a glass of water until ready to use.

Drying:  Bundle Savory together in an aerated area out of sunlight.

Harvesting Seed

When the plant goes to flower harvest the flower heads and remove seeds. Store in an aerated bag to dry.

Seeds should last 1-2 years, longer if stored in a freezer or refrigerated environment.

I bought this because I dog sit. The dog chews up every. Single. Toy. So I bought it since it was cheap and it can be in the “chunk” (the dog’s name) toy box. It is not durable at all. Before Chunk came over for the weekend, my dog Ted played with this. Ted is a larger small dog and chunk is a smaller small dog. And it is still the perfect size for both dogs.
